Wholesome mango avo salad

Ingredients

The Heart of the Salad 

  • 1 cup cooked quinoa⁠
  • 1 cup steamed broccoli
  • 1/2 cup shelled edamame⁠
  • 1 cucumber, diced⁠
  • 1 tomato, diced⁠
  • 1 cup cooked beans (I used white & chickpeas)⁠
  • 1/2 large mango, diced ⁠
  • 1 avocado , diced⁠
  • Small handful blueberries

⁠Probiotic Lemon Vinaigrette

  • Juice of 1 lemon⁠
  • 1-2 tbsp maple/ honey⁠
  • 1 tbsp high quality oil⁠
  • 1 tbsp Probiotic Cranberry

Method

  1. Add all salad components to a large bowl.
  2. Mix all vinaigrette ingredients together in a separate small bowl.
  3. Pour vinaigrette over veggies and do one final toss!
